The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspect´ed twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should auto´matically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employ´ee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed as compliant and out-of-compliance for inspections conducted June 4-11.


Roma's Pizza & Restaurant, 653 Lombard Road, Red Lion.


Action: Violations included a bag of red onions stored directly on the floor inside the utility closet next to cleaning equipment; food employee involved in food preparation had exposed beard without the use of a beard cover or beard net as required; ice scoop used in the bulk ice machine was stored directly on food storage shelves in the storeroom area, which is not considered a clean storage location; portion-size cups containing potentially-hazardous salad dressings were stored on the counter with an internal temperature of 74 degrees, rather than refrigerated as advised; several foods held above required temperatures: turkey deli meat, sliced ham, tuna salad, cheese, sliced tomatoes and beef patties; sanitizer test strips were not available; black, mold-like growth on the deflector plate and black spotting in the interior cabinet of the bulk ice machine located inside the storeroom area; multiple use of a handwash sink; fluorescent light bulbs were not properly shielded or functioning; an insect glue strip which contained dead houseflies, was hanging from the ceiling directly above the warewashing sinks;
