The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspect´ed twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should auto´matically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employ´ee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed as compliant and out-of-compliance for inspections conducted Nov. 24-30.


Hess Mart, Fishing Creek Road, Fairview Township.

Action: Violations included two working chemical containers stored on the same shelf as equipment; expired milk was for sale in the reach-in cooler; a soda line that connects to the fountain soda was resting directly on the floor; a single-use cup was stored directly in the bulk sugar container; an accumulation of residue under the hot dog grill; black residue was on the deflector plate of the fountain soda's ice machine; an accumulation of residue on the floor under the fountain soda boxes; old food residue in trash receptacle area.

Patty's Wagon, 127 Chestnut Grove Road, Dillsburg.

Action: Violations included no three-compartment sink for manual warewashing; sanitizer test strips and test kit were unavailable to determine sanitizer concentration; chemical sanitizer was not used on equipment and utensils after washing and rinsing them, and prior to use; a handwash sink was not available in the mobile unit.

Wrightsville Steam Fire Engine Hose Co. No. 1, 125 S. Second St., Wrightsville.

Action: Violations included comet cleanser stored on the same shelf as food items; spray insecticide stored next to the range/oven in the food preparation area; medicines stored inside a cabinet and on the same shelf as spices and other food products; food being stored uncovered inside the reach-in refrigerator; potatoes stored directly on the floor inside the kitchen; improper thawing of potentially hazardous food (beef patties) being thawed at room temperature rather than in refrigeration as required; ware washing sinks not kept clean while not in use; dust and other debris on floors behind and under the chest freezer in the storeroom; dried crusted food residue on the wall-mounted, manual french fry cutter-a repeat violation from a previous inspection; single-use, disposable paper towels at the hand wash sink in the kitchen.

Comment: Someone who answered the phone said they had no knowledge of the inspection. A manager could not be reached.
