The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspect´ed twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should auto´matically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employ´ee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed as compliant and out-of-compliance for inspections conducted Dec. 26-Jan. 4.


Burning Bridge Tavern, 108 Hellam St., Wrightsville.

Action: Violations included a bucket full of sanitizing solution being stored on the food preparation table; sanitizing solution was measured at toxic levels; an employee's open and uncovered beverage was observed in the food preparation area; a partially-smoked pack of cigarettes was on top of a food storage table inside the kitchen; food employees involved in food preparation were not wearing proper hair and beard restraints; single-use cups were being used as a scoop and stored inside salad dressing; improper reheating of potentially-hazardous foods was observed; thermometers were not available; food employees were not using available sanitizer test strips; french fry cutter contained dried potato debris; signs were not posted in the men's and ladies' restrooms to remind food employees to wash their hands.


Comment: Manager Steve Conti said all violations have been corrected. "We're just waiting for our reinspection," he said.

McDonald's, Robin Hood Drive, Newberry Township.

Action: Violations included prepackaged salads were held 20 degrees above the required temperature; thermometer was not available in refrigeration equipment; refrigeration gasket in the grill area contained an accumulation of old food debris; wiping cloth sanitizer was not measured at proper levels; clean food equipment was stored while wet, not allowing time for proper draining or air drying; wall behind mop sink was damaged and in need of repair.

Comment: A store manager did not return calls seeking comment.

Musso's Italian Restaurant, 406 E. Broadway, Red Lion.

Action: Violations included a food employee having a cloth towel threaded through belt loops; wet wiping cloths were stored on a cutting board instead of in sanitizer solution; hot foods were being held below proper temperatures; refrigeration unit was warmer than allowed, and $50 worth of food had to be disposed; food debris and spillage were found on the floor of the walk-in refrigerator; heavy accumulation of dried and burnt food debris inside microwave; plastic strip curtains inside the walk-in refrigerator were heavily stained; unfinished walls and ceilings in the kitchen were not easily to clean; signs were not posted in one of two restrooms, reminding food employees to wash their hands.

Comment: Manager Tony Musso said all violations have been corrected.

Red Lobster, 2555 E. Market St., York.

Action: Violations included a ware washing machine clogged with debris; an employee did not wash hands between touching dirty dishes and clean dishes; dirty knives stored as clean in the knife holder; bar soda gun was not clean to sight and touch; can opener contained food residue and was not clean to sight and touch; clean pans and shelf they were stored on contained old food debris; old stickers and glue were on clean pans; single service items were stored food-side up; handwash sink for servers did not have proper hot water temperature; bar soda gun drain line was not attached; no signs were posted in restrooms, reminding employees to wash their hands; most floor drains were dirty; an accumulation of static dust was built up on two fan covers in the walk-in refrigerator.

Comment: Manager Mark Trucksess said all violations have been corrected.

Saubel's Market, 65 E. Forrest Ave., Shrewsbury.

Action: Violations included hot potatoes being improperly cooled in large stock pots inside the walk-in cooler; deeply-scored cutting boards that were not resurfaced or discarded as required; sanitizing solution was not measured at proper concentrations; entire meat room area was not clean and sanitary; raw beef and debris were found on the floor of the walk-in cooler for meat; product spillage was found on the package machine in the meat room; the hand sink in the meat room was not clean and sanitary.

Comment: A manager could not be reached.

VFW Post 7045, 341 Yorkanna Road, York.

Action: Violations included food employees involved in food preparation were not wearing proper hair restraints; raw ground beef was stored directly above cooked pork and lettuce inside the walk-in refrigerator; potentially-hazardous frozen foods (meatballs, fish nuggets, crab cakes, shrimp, sausage, oysters, scallops, cheese sticks and fish) were stored in a reach-in freezer at higher temperature than allowed, and $280 worth of food was disposed; sanitizer test strips were not available; residual chemical sanitizer was detected in final rinse cycle of glass washer; food employee towel dried utensils and food equipment after removing them from the ware washing machine; a plastic trash bag was taped to a ceiling beam in the kitchen to collect leaking rain water directly above a food preparation table.
