The state's Department of Agriculture conducts yearly inspections of food-serving establishments to ensure public safety and safe food-handling practices. Schools are inspect´ed twice per year, according to the Bureau of Food Safety and Laboratories.

Whether an establishment is considered compliant or non-compliant is the discretion of the inspector. There are, however, several violations for which inspectors should auto´matically consider establishments non-compliant. Called "critical violations," they include food temperature issues, issues with chemicals and how they're handled, and employ´ee hygiene.

Depending on the severity of the situation, inspectors and their supervisors could file citations or close an establishment.

Below is a list of establishments listed as compliant and out-of-compliance for inspections conducted Feb. 11-18.

Cheddar's Casual Café, 1540 Toronita St., York.

Action: Violations included an employee taking a souffle cup, filling it with soda, drinking it and returning for another soda, placing the soda nozzle in the contaminated cup; food was held at 50 degrees in the server area, rather than 41 degrees or less as required; wash temperature on the dish washer reached 150 degrees and not 160 degrees; two ice scoops were dirty; insides of ovens contained large amounts of charred debris; excessive food residue was not being pre-scraped from dishes prior to warewashing as evidenced by the clogged spray nozzles and full trays of debris; soap dispenser was not working at the bar area; a dead fly was found inside a bottle of liquor, and another live insect was observed in the bar area.

Comment: Manager Gabe Ramos said all violations have been corrected.
